I don't cook as much as I would like to, but I do tend to spend more time at the grill than in the kitchen. Here are some of my favorite recipes that I make. They are not orginal - I mostly stole the basics and improvised my own ideas. I will add more as I get around to it.
- Braciola - I love my pasta - especially when I use my own homemade sauce. I think it's the best, even if I do say so myself. You won't find that recipe among my favorites here, but I will share my braciola recipe. It takes a while to make, so I make a few servings at a time and freeze them and just add them to my sauce as I need it and let it simmer all day.
- Chile con Carne - This is a rather traditional recipe for chile - some would call it boring. I like to refer to it as dependable. I use Dei Fratelli seasoned diced tomatoes because it gives it a nice, sweet flavor. The recipe as shown makes 8 servings. Feel free to double or triple it up and freeze the leftovers for those cold football Sundays.
- Corn Chowder - This is a fairly time-consuming meal to make, but it is so worth it. Warm up some corn bread and you have another one of my favorite winter football-watching meals. This should make about 4 servings.
- Grilled Shrimp - I stole this recipe from some article in the newspaper or magazine, but it is fairly generic. Crisp these bad boys up on the grill and they make a terrific appetizer.
- Meatloaf - This is a fairly simple and straightforward recipe. I may have stolen it from Dad's Own Cookbook.
- Shepards Pie - This is a variation of a recipe that I had at my friend, Dominic's house one day. His wife, Dar, made it for us for lunch one day while we were helping to build the Lucent Empire.
- Pepper-Grilled Garlic Tuna Steaks - If you like grilled tuna steaks and like garlic, this is a match made in heaven.
