This is a variation of a recipe that I had at my friend, Dominic's house one day. His wife, Dar, made it for us for
lunch one day while we were helping to build the Lucent Empire.
- 6 New Brunswick baking potatoes (mashed with milk and butter) or
- equivalent of instant potatoes (light and fluffy)
- 2 lbs. lean ground beef (80-85%)
- 16 oz. bag of shredded cheddar cheese
- 2 - 10 oz. can of cream style corn (or bag of frozen)
- 12 oz. can of whole kernel corn, drained (or bag of frozen)
- 12 oz. can of peas, drained (or bag of frozen)
- 1 tsp. salt
- Pepper to taste
- Hot sauce to taste
- 2 tbsp. finely chopped onion or dried minced onion (optional)
Brown ground beef (and onions, if desired) and drain.
Turn into a 2 quart baking dish to form bottom layer of pie.
Sprinkle in hot sauce.
Add cream style corn and make a layer of each whole kernel corn and peas.
Add potaotes to make top layer.
Cover with shredded cheddar cheese.
Bake in oven at 350° until cheese is melted (60-75 minutes).
